There are three grades of Maple Syrup, based on USDA standards. All grades have the same consistency. They differ slightly in color and flavor. Which grade to use is a matter of personal preference, but all taste great!

Light Amber - has a milder, maple taste and is
made early in the season when the weather is
cold and brisk. This is considered best for fine
maple candy.

Medium Amber - is also a fine table syrup.
A little more maple flavor and asked for by a
majority of people. This is made after the weather
begins to warm, about mid-season.

Dark Amber - although slightly darker in color with
a stronger maple flavor, it is fast becoming a
favored table syrup.
