Maple Syrup
There are three grades of Maple Syrup,
based on USDA standards. All grades have the same consistency. They differ slightly in
color and flavor. Which grade to use is a matter of personal preference, but all taste
great!
 | Light Amber - has a milder, maple taste
and is
made early in the season when the weather is
cold and brisk. This is considered best for fine
maple candy.

 | Medium Amber - is also a fine table
syrup.
A little more maple flavor and asked for by a
majority of people. This is made after the weather
begins to warm, about mid-season.

 | Dark Amber - although slightly darker
in color with
a stronger maple flavor, it is fast becoming a
favored table syrup.
